I have a penchant for glamorous films from the 50’s & 60’s, such as Bonjour Tristesse or L’Avventura. I could sit and watch them over and over and over… So, it is no wonder these classics inspire my work with chocolate. Cécile’s (Bonjour Tristesse) afternoon hikes through the scented pines along the Côte d’Azur stirred my imagination, resulting in the two latest chocolate creations at La Châtelaine: the Rosemary & the Lemon Basil. The savory flavors do pair well with the dark chocolate and it is my hope to pare them down so that they never over power the chocolate (or your palate). As a sweet scent can provoke memories of a walk along the coast (even imagined), so can the taste.
