Cupcakes

Cupcakes…Yes, cupcakes. I thought of myself as more of a gâteau girl, but because of the nature of my small shop, cupcakes seem a perfect fit for special occasions. Customers are more likely to purchase a delicate, petite piece of (cup)cake than an entire cake, non? I use the same practices as I use for our chocolaterie – less sweet & reflective of the seasons. No… La Châtelaine has not become a cupcakerie… we are and always will be a chocolaterie… but the pastry chef in me has gotta bake!
